Bowl of Copycat Panera Potato Soup

Enjoy a creamy and comforting bowl of potato soup just like Panera’s, made easily in your own kitchen. This copycat recipe delivers the same rich flavor and satisfying texture, perfect for a chilly day.

  • 5 medium Russet potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  2. While the potatoes are cooking, melt the butter in a separate saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.
  3. Whisk in the flour and cook for 1 minute, stirring constantly, to create a roux. Gradually whisk in the milk and heavy cream until smooth.
  4. Pour the cream mixture into the pot with the potatoes. Use an immersion blender to partially blend the soup until it reaches your desired consistency. You can also use a regular blender, but be careful when blending hot liquids.
  5. Season with salt and pepper to taste.
  6. Stir in half of the crumbled bacon and half of the shredded cheddar cheese.
  7. Serve hot, garnished with the remaining bacon, cheddar cheese, and fresh chives.

Notes

For a thicker soup, blend more of the potatoes. You can also add a dollop of sour cream or a sprinkle of paprika for extra flavor.
