This Coconut Curry Baked Cod is a flavorful and healthy dish featuring tender cod fillets baked in a creamy coconut curry sauce, perfect for a quick and delicious dinner.

  • 4 cod fillets (about 6 oz each)
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp lime juice
  • 1 tsp turmeric powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion, garlic, and grated ginger; sauté until fragrant and translucent, about 3-4 minutes.
  3. Stir in the red curry paste and turmeric powder; cook for 1 minute.
  4. Add coconut milk and lime juice; stir well and let simmer for 5 minutes to thicken slightly.
  5. Place cod fillets in a baking dish and season with salt and pepper.
  6. Pour the coconut curry sauce over the cod fillets, ensuring they are well coated.
  7. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Garnish with fresh cilantro and serve immediately over cooked jasmine rice.

Notes

For an extra kick, add sliced fresh chili or a pinch of cayenne pepper to the curry sauce before baking.
