Citrus Berry Burnt Cheesecake

This Citrus Berry Burnt Cheesecake combines a creamy, caramelized crust with a refreshing burst of citrus and mixed berries, creating a perfect balance of tangy and sweet flavors.

  • 600g cream cheese, softened
  • 200g granulated sugar
  • 3 large eggs
  • 200ml heavy cream
  • Zest of 1 lemon
  • Zest of 1 orange
  • 2 tbsp lemon juice
  • 150g mixed berries (blueberries, raspberries, strawberries)
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat the oven to 210°C (410°F). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Pour in the heavy cream, vanilla extract, lemon and orange zest, lemon juice, and continue mixing until well combined.
  5. Sift in the flour and salt, folding gently until incorporated.
  6. Gently fold in half of the mixed berries into the batter.
  7. Pour the batter into the prepared pan and sprinkle the remaining berries on top.
  8. Bake for 50-60 minutes until the top is deeply caramelized and burnt looking, but the center is still slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to cool gradually.
  10. Remove from oven, cool completely at room temperature, then refrigerate for at least 4 hours before serving.

Notes

For an extra zest, serve chilled with a drizzle of citrus-infused honey or a dollop of whipped cream.
