  • 1 cup sourdough starter (discard or active)
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • Vegetable oil, for frying

Instructions

  1. In a medium saucepan, combine water and butter; bring to a boil.
  2. Remove from heat and stir in flour until a dough forms and pulls away from the pan.
  3. Transfer dough to a mixing bowl and let cool slightly.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in the sourdough starter until fully incorporated.
  6. Heat vegetable oil in a deep pan to 350°F (175°C).
  7. Pipe or spoon small bite-sized portions of dough into the hot oil and fry until golden brown, about 2-3 minutes per batch.
  8. Remove churro bites with a slotted spoon and drain on paper towels.
  9. Mix sugar and cinnamon in a bowl and roll warm churro bites in the cinnamon sugar mixture until coated.
  10. Serve warm and enjoy!
