These Cinnamon Roll Cookies are a delightful twist on the classic breakfast treat. Soft, chewy, and packed with cinnamon-sugar goodness, they’re perfect for satisfying your sweet tooth any time of day.

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 2-3 tablespoons milk

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  4. In a small bowl, combine the melted butter, granulated sugar, and cinnamon for the filling.
  5. Roll dough into 1-inch balls. Flatten slightly and make a small indent in the center with your thumb.
  6. Fill the indents with the cinnamon-sugar mixture.
  7. Bake for 8-10 minutes, or until the edges are lightly golden.
  8. While the cookies are baking, whisk together the powdered sugar and milk to make the glaze.
  9. Let the cookies cool slightly on the baking sheets before transferring them to a wire rack to cool completely.
  10. Drizzle the glaze over the cooled cookies and serve.

Notes

For an extra touch, add a sprinkle of chopped pecans or walnuts to the cinnamon-sugar filling.
