  • 1/3 cup chopped pecans
  • 1/2 cup crumbled feta cheese
  • 1 small red apple, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large salad bowl, combine the mixed greens, dried cranberries, chopped pecans, crumbled feta cheese, sliced apple, and red onion.
  2. In a small bowl, whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until smooth.
  3. Pour the honey mustard dressing over the salad and toss gently to coat all ingredients evenly.
  4. Serve immediately, garnished with extra pecans or cranberries if desired.
