Chocolate Mousse Brownies

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup heavy cream
  • 6 ounces bittersweet chocolate, finely chopped
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. In a medium saucepan, melt butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla.
  3. Beat in cocoa, flour, salt, and baking powder. Spread batter into prepared pan.
  4. Bake for 20–25 minutes or until a toothpick inserted in the center comes out with moist crumbs. Let brownies cool completely.
  5. For the mousse, heat 1/2 cup of heavy cream until just simmering. Pour over chopped bittersweet chocolate and let sit for 2 minutes, then stir until smooth. Chill until barely set.
  6. In a separate bowl, whip remaining 1/2 cup heavy cream with powdered sugar until stiff peaks form.
  7. Fold whipped cream into the chilled chocolate mixture gently until combined.
  8. Spread mousse evenly over cooled brownies. Refrigerate for at least 2 hours before serving.

Notes

For an extra touch, sprinkle shaved chocolate or a pinch of sea salt on top before serving.
