Ingredients

Scale
  • 1 ½ cups chocolate cookie crumbs
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • ¼ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips, melted

Instructions

  1. Preheat oven to 325°F (163°C) and line a muffin tin with paper liners.
  2. Combine chocolate cookie crumbs and melted butter until mixture resembles wet sand. Press firmly into the bottom of each liner to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, beating after each addition.
  5. Mix in sour cream, cocoa powder, and vanilla extract until fully incorporated.
  6. Stir in melted chocolate chips gently to combine.
  7. Pour the cheesecake batter over the prepared crusts, filling each about ¾ full.
  8. Bake for 18-20 minutes or until edges are set but centers slightly jiggle.
  9. Let cheesecakes cool completely, then refrigerate for at least 4 hours or overnight.
  10. Before serving, decorate each mini cheesecake with a gnome-shaped chocolate decoration for a whimsical touch.

Notes

For an extra festive flair, drizzle melted white chocolate over the cheesecakes or sprinkle with edible glitter before adding the gnome toppers.
