Enjoy all the comforting flavors of chicken parmesan in a cozy soup! This easy recipe features tender chicken, rich tomato broth, and a cheesy topping for a satisfying meal.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup cooked pasta (ditalini or small shells recommended)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil, for garnish
  • Mozzarella cheese, shredded, for topping

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Season chicken with salt and pepper and add to the pot. Cook until browned on all sides and cooked through. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in crushed tomatoes, chicken broth, oregano, basil, and red pepper flakes (if using). Bring to a simmer and cook for 15 minutes, stirring occasionally.
  4. Add cooked pasta and cooked chicken to the soup. Heat through.
  5. Ladle soup into bowls. Top with shredded mozzarella cheese and grated Parmesan cheese. Garnish with fresh basil.
  6. Serve immediately.

Notes

For an extra cheesy soup, stir in a few tablespoons of cream cheese or mascarpone cheese at the end of cooking. Serve with crusty bread for dipping.
