Chicken Orzo Skillet

A hearty and flavorful one-pan meal combining tender chicken, tender orzo pasta, and fresh vegetables, perfect for a quick and satisfying dinner.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 1/2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup spinach leaves
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt, pepper, and oregano, and cook until browned on all sides, about 5-7 minutes.
  3. Add the diced onion and garlic to the skillet and sauté until softened, about 2-3 minutes.
  4. Stir in the orzo pasta and cook for 1-2 minutes until slightly toasted.
  5. Pour in the chicken broth and diced tomatoes, stir to combine, and bring to a boil.
  6. Reduce heat to low, cover the skillet, and simmer for 12-15 minutes, or until the orzo is tender and most liquid is absorbed.
  7. Stir in the spinach and grated Parmesan cheese until the spinach wilts and everything is well combined.
  8. Adjust seasoning with salt and pepper as needed.
  9. Garnish with chopped fresh parsley before serving.

Notes

For extra flavor, try adding a squeeze of fresh lemon juice just before serving or sprinkle with crushed red pepper flakes for a bit of heat.
