Chicken Gloria is a delightfully flavorful dish featuring tender chicken breasts in a creamy, sun-dried tomato sauce. This recipe is perfect for a weeknight dinner that feels special.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in sun-dried tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes, or until sauce has slightly thickened.
  5. Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  6. Return chicken breasts to the skillet and spoon sauce over top. Heat through for 2-3 minutes.
  7. Garnish with fresh basil and serve.
