Delicious Homemade Chicken Corn Chowder

This creamy Chicken Corn Chowder is a comforting and flavorful soup perfect for a chilly day. Loaded with tender chicken, sweet corn, and hearty potatoes, it’s a satisfying meal the whole family will love.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 cups peeled and cubed potatoes
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups frozen corn
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Pour in the chicken broth and add the chicken, potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the chicken is cooked through and the potatoes are tender.
  3. Stir in the frozen corn and heavy cream. Heat through, but do not boil.
  4. Garnish with fresh parsley and serve hot.

Notes

For a thicker chowder, mash some of the potatoes before adding the corn and cream. You can also add a pinch of red pepper flakes for a little heat.
