chicken and zucchini bake

A wholesome and easy chicken and zucchini bake combining tender chicken breasts with fresh zucchini and melted cheese, perfect for a healthy weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup chopped fresh basil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the chicken breasts into thin cutlets or bite-sized pieces.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  4. Add the chicken pieces to the skillet, season with salt, pepper, and oregano, and cook until browned but not fully cooked through, about 4–5 minutes.
  5. In a baking dish, layer half of the zucchini slices, then add the partially cooked chicken evenly on top.
  6. Sprinkle half the mozzarella and Parmesan cheeses over the chicken.
  7. Layer the remaining zucchini slices over the cheese and top with the remaining mozzarella and Parmesan.
  8. Bake in the preheated oven for 20–25 minutes, or until the chicken is cooked through and the cheese is melted and golden.
  9. Remove from oven and garnish with chopped fresh basil if desired before serving.

Notes

For extra flavor, serve with a side of garlic bread or a fresh green salad. You can also add cherry tomatoes for a burst of color and taste.
