Chicken and Spinach Casserole

A comforting and nutritious baked casserole featuring tender chicken, fresh spinach, and creamy cheese, perfect for a hearty family dinner.

  • 2 cups cooked chicken, shredded
  • 4 cups fresh spinach, chopped
  • 1 cup cream of mushroom soup
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant and translucent, about 3-4 minutes.
  3. In a large bowl, combine cooked chicken, chopped spinach, sautéed onion and garlic, cream of mushroom soup, sour cream, mozzarella, Parmesan, salt, and pepper. Mix well.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Sprinkle breadcrumbs over the top if using, for a crunchy topping.
  6. Bake uncovered for 25–30 minutes until bubbly and golden brown on top.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, add a pinch of crushed red pepper flakes or serve with a side of garlic bread.
