  • 2 cups cooked shredded chicken breast
  • 6 cups chicken broth
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup egg noodles
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Optional: fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic, sautéing until the vegetables are tender, about 5 minutes.
  2. Add the chicken broth, salt, pepper, thyme, and parsley to the pot. Bring to a boil.
  3. Once boiling, add the egg noodles and cook according to package instructions, usually about 7 minutes.
  4. Stir in the shredded chicken and cook for an additional 3-4 minutes until heated through.
  5. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.

Notes

For an extra boost of flavor, add a splash of lemon juice or a pinch of red pepper flakes before serving.
