Cherry Blossom Cookies

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 24 maraschino cherries, drained and halved
  • Optional: pink food coloring for dough tint

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If desired, add a few drops of pink food coloring and gently mix to tint dough.
  7. Roll dough into 1-inch balls and place on prepared baking sheets about 2 inches apart.
  8. Press one cherry half gently into the center of each dough ball, cut side down.
  9. Bake for 12-15 minutes or until edges are lightly golden.
  10. Remove from oven and let cookies cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.

For a festive touch, drizzle melted white chocolate over cooled cookies or sprinkle with powdered sugar before serving.
