Cheesy Potato Skins

These cheesy potato skins are the perfect appetizer or game-day snack! Crispy on the outside and loaded with melted cheese, bacon, and sour cream, they’re sure to be a crowd-pleaser.

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce each several times with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until potatoes are tender.
  5. Let potatoes cool slightly. Cut each potato in half lengthwise.
  6. Scoop out the potato flesh, leaving a 1/4-inch border. Save the potato flesh for another use (e.g., mashed potatoes).
  7. Place potato skins on a baking sheet.
  8. Sprinkle each potato skin with cheddar cheese and bacon.
  9. Bake for 5-10 minutes, or until cheese is melted and bubbly.
  10. Top with sour cream and green onions before serving.

Notes

For extra flavor, add a sprinkle of garlic powder or onion powder to the potato skins before baking. Serve with your favorite dipping sauce.
