This hearty Cheesy Hamburger Potato Soup is the ultimate comfort food! It’s packed with ground beef, potatoes, and plenty of cheese for a satisfying and flavorful meal that’s perfect for a chilly evening.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, peeled and cubed
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk or cream
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, bacon bits

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and add the cubed potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Stir in the cream of mushroom soup and diced tomatoes and green chilies. Heat through.
  5. Remove from heat and stir in the shredded cheddar cheese and milk or cream until the cheese is melted and the soup is smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with your favorite toppings such as sour cream, green onions, or bacon bits.

Notes

For a richer flavor, use beef broth instead of chicken broth. You can also add a pinch of red pepper flakes for a little heat.
