  • 2 cups cooked chicken breast, shredded
  • 2 cups fresh broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 2 cups chicken broth
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. In a large skillet, melt butter over medium heat. Add chopped onion and garlic; sauté until softened and fragrant, about 3 minutes.
  2. Add the orzo to the skillet and toast it lightly for 2 minutes, stirring frequently.
  3. Pour in the chicken broth and milk, stirring to combine, then bring to a simmer.
  4. Cover and cook for 8-10 minutes until the orzo is tender, stirring occasionally to prevent sticking.
  5. Stir in the shredded chicken and broccoli florets into the skillet. Cover and cook for an additional 5 minutes until broccoli is tender and chicken is heated through.
  6. Remove from heat, then mix in the cheddar cheese and Parmesan until melted and creamy.
  7. Season with salt, pepper, and red pepper flakes if using. Serve hot and enjoy!
