1 lb ground beef
4 cups diced potatoes
1 cup chopped onions
1 cup shredded cheddar cheese
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
2 tbsp olive oil
Instructions
Preheat oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat and sauté onions and garlic until soft.
Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
Drain excess fat from the skillet.
In a mixing bowl, combine cream of mushroom soup and milk.
In a greased casserole dish, layer half of the diced potatoes.
Spread the cooked ground beef mixture evenly over the potatoes.
Pour half of the soup mixture over the beef layer.
Add the remaining potatoes on top and pour the remaining soup mixture evenly over the casserole.
Sprinkle shredded cheddar cheese on top and season with salt, pepper, and paprika.
Cover with foil and bake for 45 minutes.
Remove foil and bake an additional 15 minutes until cheese is golden and bubbly.
Let stand for 5 minutes before serving.
Notes
For extra flavor, add a dash of hot sauce or serve with a crisp green salad on the side.
