Caramelized Apple Samoas combine tender apples with rich caramel and crisp cookie layers, creating a deliciously sweet and crunchy treat perfect for dessert or snacks.

  • 2 cups thinly sliced tart apples
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 12 shortbread cookies
  • 1/2 cup caramel sauce
  • 1/4 cup shredded toasted coconut
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon vegetable oil (for melting chocolate)

Instructions

  1. Melt butter in a skillet over medium heat. Add apples, brown sugar, and cinnamon, cooking until apples are tender and caramelized, about 8 minutes. Remove from heat and let cool slightly.
  2. Spread a spoonful of caramel sauce on each shortbread cookie.
  3. Top the caramel layer with a tablespoon of the caramelized apples on each cookie.
  4. Sprinkle toasted coconut evenly over the apple layer.
  5. Melt chocolate chips with vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  6. Drizzle melted chocolate over the coconut and apples or dip half of each cookie into the chocolate for a decorative finish.
  7. Place the assembled Samoas on parchment paper and refrigerate for 15 minutes to set the chocolate.
  8. Serve chilled or at room temperature.

Notes

For extra crunch, sprinkle chopped pecans along with the toasted coconut. These treat cookies can be stored in an airtight container for up to 3 days.
