  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup packed brown sugar
  • 4 medium apples, peeled, cored, and sliced
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a saucepan, melt butter and brown sugar over medium heat, stirring until smooth. Pour into the prepared cake pan.
  3. Arrange apple slices evenly over the caramel mixture.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  5. In a separate bowl, cream together granulated sugar and vegetable oil. Beat in egg and vanilla extract.
  6. Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour batter over the apples in the cake pan.
  8. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes before inverting onto a serving plate.
  10. Serve warm.
