These Caramel Apple Cheesecake Bars are a decadent fall treat! A buttery graham cracker crust is topped with a creamy cheesecake filling, sweet apples, and a luscious caramel drizzle.

  • For the Crust:
  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • For the Cheesecake Filling:
  • 24 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • For the Apple Topping:
  • 2 medium apples, peeled and diced
  • 2 tablespoons butter
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup caramel sauce, for drizzling

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9×13 inch baking pan. Bake for 8-10 minutes.
  2. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla and sour cream.
  3. Prepare the Apple Topping: While the crust is baking, melt butter in a skillet over medium heat. Add diced apples, brown sugar, and cinnamon. Cook until apples are softened, about 5-7 minutes.
  4. Assemble and Bake: Pour cheesecake filling over the baked crust. Top with the cooked apples.
  5. Bake for 25-30 minutes, or until the center is just set.
  6. Let cool completely before refrigerating for at least 2 hours.
  7. Drizzle with caramel sauce before serving.

Notes

For an extra touch, sprinkle chopped pecans or walnuts on top of the caramel drizzle.
