Capricorn Cake

Capricorn Cake is a rich and moist spiced cake layered with creamy frosting, perfect for cozy gatherings and celebrations.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins (optional)
  • For the frosting: 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  6. Fold in chopped walnuts and raisins if using.
  7. Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cake to cool completely on a wire rack before frosting.
  9. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy.
  10. Spread frosting evenly over the cooled cake. Slice and serve.

Notes

For an extra festive touch, sprinkle chopped walnuts on top of the frosting or add a dash of orange zest to the batter.
