Cajun Scalloped Potatoes

These Cajun Scalloped Potatoes combine creamy layers of tender potatoes with a spicy, flavorful Cajun twist, perfect as a comforting side dish for any meal.

  • 4 cups thinly sliced Yukon gold potatoes
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 ½ cups whole milk
  • 1 cup heavy cream
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional for extra heat)
  • Salt and black pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Butter a 9×13-inch baking dish.
  2. In a medium saucepan, melt butter over medium heat. Add onion and garlic; sauté until softened, about 3-4 minutes.
  3. Whisk in flour and cook for 1 minute to form a roux.
  4. Gradually whisk in milk and cream, stirring constantly until sauce thickens, about 5-7 minutes.
  5. Remove from heat and stir in Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, pepper, and 1 cup of the cheddar cheese until melted.
  6. Arrange half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce evenly over the potatoes.
  7. Repeat layering with remaining potatoes and sauce.
  8. Top with remaining ½ cup cheddar cheese.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 20-25 minutes or until potatoes are tender and top is golden brown.
  10. Let rest for 10 minutes before serving. Garnish with fresh parsley.

Notes

For extra crispy topping, sprinkle breadcrumbs mixed with melted butter on top before baking uncovered in the last 10 minutes.
