A Bowl of Creamy Cajun Potato Soup

Warm up with this creamy and flavorful Cajun Potato Soup! Loaded with potatoes, vegetables, and a kick of Cajun spice, it’s the perfect comfort food for a chilly day.

  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced green bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 6 cups chicken broth
  • 2 pounds russet potatoes, peeled and cubed
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, green onions, bacon bits

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and green bell pepper and cook until softened, about 5-7 minutes.
  2. Add garlic, Cajun seasoning, smoked paprika, and cayenne pepper (if using) and cook for 1 minute more, until fragrant.
  3. Pour in chicken broth and add potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  5. Return the soup to the pot and stir in heavy cream. Heat gently, being careful not to boil.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with shredded cheddar cheese, green onions, and bacon bits, if desired.

Notes

For a thicker soup, blend a portion of the soup and return it to the pot before adding the cream. Serve with crusty bread for dipping.
