  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until translucent, about 3-4 minutes.
  2. Add ground turkey, breaking it apart with a spoon. Cook until browned, about 6-8 minutes.
  3. Stir in chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper; cook for 1 minute until fragrant.
  4. Add diced butternut squash, red bell pepper, diced tomatoes with their juice, black beans, and chicken broth. Stir to combine.
  5. Bring chili to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes until the squash is tender.
  6. Adjust seasoning to taste. Serve hot, garnished with fresh cilantro.

Notes

For extra richness, top the chili with a dollop of Greek yogurt or shredded cheese. This chili also freezes well for easy meal prep.
