This comforting Broccoli Cheese Rice Casserole is a classic side dish or light meal. It combines tender broccoli, creamy cheese sauce, and fluffy rice for a satisfying and flavorful experience.

  • 1 cup long-grain rice, cooked
  • 2 cups broccoli florets, steamed
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until the sauce has thickened.
  4. Remove from heat and stir in cheddar cheese, Parmesan cheese, salt, pepper, and nutmeg until the cheese is melted and smooth.
  5. In a large bowl, combine the cooked rice, steamed broccoli, and cheese sauce. Stir to combine.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Let stand for 5-10 minutes before serving.

Notes

For a richer flavor, use Gruyere or Monterey Jack cheese in addition to cheddar. Top with breadcrumbs before baking for added texture.
