Blueberry Thyme Chicken

A delightful blend of juicy chicken breasts infused with fresh thyme and topped with a vibrant blueberry sauce, perfect for a flavorful yet healthy dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme leaves
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 cup chicken broth

Instructions

  1. Season the chicken breasts with salt, pepper, and half of the thyme leaves.
  2. Heat olive oil in a skillet over medium heat and cook the chicken for 5-7 minutes on each side or until cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  5. Add blueberries, honey, balsamic vinegar, chicken broth, and remaining thyme leaves; stir and simmer for 5-7 minutes until sauce thickens.
  6. Return the chicken to the skillet and coat with the blueberry sauce, cooking for an additional 2 minutes.
  7. Serve the chicken topped with the warm blueberry thyme sauce.

Notes

For an extra burst of flavor, garnish with fresh thyme sprigs and serve alongside roasted vegetables or a light salad.
