Ingredients

Scale
  • 6 cups fresh blueberries
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons butter, cut into small pieces
  • 1 recipe double-crust pie pastry (homemade or store-bought)
  • 1 tablespoon milk or cream (for brushing)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, gently combine blueberries, sugar, flour, lemon juice, cinnamon, and salt.
  3. Line a 9-inch pie plate with the bottom crust.
  4. Pour blueberry mixture into the crust. Dot with butter pieces.
  5. Cover with the top crust. Crimp the edges to seal and cut vents in the top.
  6. Brush the top crust with milk or cream and sprinkle with sugar.
  7. Bake for 45-55 minutes, or until crust is golden brown and filling is bubbly. If the crust browns too quickly, cover the edges with foil.
  8. Let cool completely before serving.
