Delectable Berry Cheesecake

Indulge in a creamy and decadent berry cheesecake that’s bursting with fresh, vibrant flavors. This easy-to-make dessert is the perfect showstopper for any occasion.

  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 ½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • ½ cup berry jam

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes. Let cool.
  4. In a large bowl, beat cream cheese and 1 ½ cups sugar until smooth.
  5. Beat in vanilla extract. Add eggs one at a time, beating well after each addition.
  6. Stir in sour cream until combined.
  7. Pour batter over cooled crust.
  8. Bake for 55-65 minutes, or until center is just slightly jiggly.
  9. Turn off oven and let cheesecake cool in oven for 1 hour with the door slightly ajar.
  10. Remove from oven and let cool completely. Refrigerate for at least 4 hours, or overnight.
  11. Before serving, top with mixed berries and berry jam.

Notes

For a richer flavor, use full-fat cream cheese and sour cream. You can also substitute the mixed berries with your favorite single berry or a combination of fruits.
