Avocado Pasta Salad

This Avocado Pasta Salad is creamy, refreshing, and packed with healthy fats! It’s a quick and easy meal perfect for lunch, potlucks, or a light dinner.

Ingredients

  • 8 ounces pasta (rotini, penne, or your favorite shape)
  • 2 ripe avocados, pitted and diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, diced avocado, cherry tomatoes, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, minced garlic, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine.
  5. Serve immediately or chill for later.

Notes

For an extra protein boost, add grilled chicken or chickpeas.
