African Peanut Soup

African Peanut Soup is a hearty and flavorful West African dish featuring rich peanut butter and tender vegetables, perfect for warming up on any day.

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch piece fresh ginger, grated
  • 1 sweet potato, peeled and cubed
  • 2 large carrots, sliced
  • 1 red bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup smooth peanut butter
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger; cook for 1 minute until fragrant.
  4. Add sweet potato, carrots, and red bell pepper; sauté for 3-4 minutes.
  5. Pour in diced tomatoes and vegetable broth; bring to a boil.
  6. Reduce heat and simmer until vegetables are tender, about 20 minutes.
  7. In a small bowl, whisk peanut butter with a few ladlefuls of hot soup until smooth.
  8. Stir peanut butter mixture back into the pot. Add cumin, cayenne pepper (if using), salt, and pepper.
  9. Simmer for another 5 minutes, stirring occasionally.
  10. Serve hot, garnished with fresh cilantro.

Notes

For added protein, stir in cooked shredded chicken or serve with steamed rice or warm flatbread.
